MRH’s Resident Chef Earns Credentials

MRH’s Resident Chef Earns Credentials ~ Marlette Regional Hospital would like to recognize the achievement of its resident Chef, Bryan Gawlas, for receiving his Certified Dietary Manager (CDM) and Certified Food Protection Professional (CFPP) certification.

CDM and CFPPs are experts at managing foodservice operations and ensuring food safety. In order to receive this certification, applicants must pass a nationally-recognized credentialing exam and demonstrate excellence in nutrition, foodservice, personnel and communications, sanitation and safety, and business operations.

At Marlette Regional Hospital, Chef Bryan is responsible for development of menus, foodservice purchasing, food preparation, applying nutrition principles for well-balanced meals, and managing his work team. In addition to servicing patients that are admitted to the hospital, he also provides food service for Marlette Regional Hospital’s 39-bed licensed nursing home, a 24-unit senior retirement complex, a 6-unit inpatient hospice residence, as well as meals for hospital staff and visitors. Just as unique as the variety of patrons and food options he serves, Chef Bryan offers catering services for local events.

Chef Bryan has been with Marlette Regional Hospital for 14 years and is highly respected by his peers. He takes pride in all that he does and aims to change the stigma of “hospital food” by use of fresh, quality ingredients and a home-style approach to cooking.
